Cleansing Herbal Pesto

Prep time: 10 minutes

*Makes about 1 cup

1 bunch fresh cilantro, washed, dried and stems clipped
2 tablespoons fresh oregano, or 2 teaspoons dried oregano
1 lime, juiced
3/4 cup extra virgin olive oil
1/3 cup pine nuts
2 cloves garlic, minced
sea salt to taste

Blend all ingredients together. Use as a thicker salad dressing, a dip for vegetables, or as a topping for chicken or fish after it has been cooked.

Oregano:

  • Contains vitamins A, C, E, and K, as well as fiber, folate, iron, magnesium, vitamin B6, calcium, and potassium
  • Has anti-inflammatory, anti-microbial, and anti-fungal effects, and may kill MRSA, listeria, and other pathogens
  • Is an essential oil may be useful for respiratory ailments like colds and flu

Cilantro:

  • Minerals like potassium, calcium, manganese, iron and magnesium
  • Vitamins A, C and K, as well as B vitamins
  • Antiseptic, antifungal, antioxidant, disinfectant and antibacterial properties
